Halloween has come and gone in a flash and before we know it we will be standing by that bonfire, watching fireworks go off. Now, I don’t know about you, but I love a chilli on bonfire night, however, this year I wanted to ring the changes. I had to be something easy and quick, but warming and filling. It also had to be enjoyed by adults and children so I knocked this up last night (a trial run) and it was just delish.
Veggie Meatless Balls in Rich Tomato Sauce (Serves 2)
Vegetarian meatless balls (I used Linda McCartney’s)
1 x Tin good quality chopped tomatoes
1 x small onion, finely chopped
1 x clove garlic
3 x mushrooms, sliced
Packet of fresh Basil, chopped
Salt and Pepper for seasoning
Olive oil for frying
Pop the oven on to 200c. Heat a frying pan and gently fry the onions until soft, then add the garlic and mushrooms and seasoning, keep gently frying. Once the oven has reached temperature pop the meatless balls into the oven (in a metal tray) for 20 minutes. Add the tin of tomatoes and half of the chopped basil to the frying pan. Simmer for 20 minutes, if the liquid starts to dry add a little water, but not too much.
Once the meatless balls have cooked pop into the frying pan with the rich tomato sauce and turn off. (When you return from the bonfire, turn the heat on low to heat through).
I personally served this with courgetti (spiralised courgette) which I love, I don’t cook it first as find the sauce and meatballs heat the courgette and it still has a crunch. This meal however, would work really well with spaghetti and the kids may prefer, I will leave that with you to decide.
It is true comfort food and perfect for a bonfire night weekend. Enjoy.
