The holiday season is now behind us and with the return of our everyday routines we need all the energy we can get! I like to set a perfect tone for my day with this wonderful vitality packed seasonal fruit and Bircher super-bowl from Jamie O
You will need, for 4 good portions
8 fresh figs
¼ teaspoon cinnamon
4 tablespoons unsweetened orange juice
2 tablespoons honey
600g Greek yoghurt
4 tablespoons granola
2 tablespoons unsalted pistachio (or your favourite) nuts
Preheat your oven to 200ºC.
Halve your figs and arrange cut-side up on a lined or non-stick baking tray,
Whisk the cinnamon, orange juice and honey together in a small bowl until nicely combined, spoon over the figs and roast in the oven until tender and sticky, (10–15 mins)
Scatter the blackberries over the fig mixture and back to the oven for another 2-3 mins.
Divide the yoghurt into four pots or bowls. Top with the roasted fruit, reserving all the wonderful juices.
Scatter the nuts and granola over the bowls and finally drizzle over the reserved juices.
