The sun is out hooray and what better way to cool down than a lovely ice lolly, easy to make and just delicious. But what type of lollies, well nothing beats a watermelon in the summer, this gorgeous fruit thoroughly refreshes, is sweet, full of natural water and perfect for any lolly base, but in this instance we have added kiwi what a fabulous combination and full of vitamin C.
Ice lolly moulds
1 small watermelon
Half the watermelon and scoop out all of the flesh, making sure you discard the pips (you will need around 375-400g). Pop into a liquidiser or hand blender and blend thoroughly. Put the mixture into the moulds fill to approximately 3/4 full then push in the sticks. Pop into the freezer for 3 hours or overnight.
Peel the kiwis, then cut them in half and get rid of the core just keeping the green flesh. Again puree the mixture then add to the moulds filling to the top. Pop back into the freezer for a minimum of 1 hour or until frozen.
Then just enjoy.
