I’m going through a hungry period of my life, craving snacks between meals, especially after my yoga practice. When I need something filling and healthy to satisfy my munchies this is where I turn, have some in your fridge or your lunch-box for an instant energy hit when you need it.
Hemp has a wonderful nutty flavour that blends easily into smoothies and baked goods for extra omega fats and protein. Adding creaminess and richness plus giving hours of energy.
For 24 bars you will need:
3 1/2 cups Gluten-Free Oats
1/4 cup Flax seeds
1/2 cup Hempseed
1/4 cup Chia Seeds
3/4 cup Sliced Almonds
1 cup Unsweetened Shredded Coconut
1 cup honey
1/2 cup Coconut Oil
3/4 cup Almond butter
1 1/2 tsp Vanilla Extract
Whisk all of the wet ingredients together in a bowl to blend well.
Mix all of the dry ingredients together in a bowl to blend well.
Pour the wet ingredients into the bowl with the dry ingredients and mix, coating the dry ingredients well.
Pour the mixture into a baking pan.
Press the mixture down with a spatula or spoon to smooth the bars
Chill for at least an hour in the fridge, or until the mixture is firm.
Cut into even sized bars and pop back in the fridge to store.
