Well the sun is out and it looks like we may even have a great bank holiday. I don’t know about you, but I love a good BBQ and I am always looking for slightly different recipes. So last night I had prepped my lovely halloumi and veggie kebabs and I thought what can I serve with them.
I had a heap load of tomatoes leftover from a bruschetta I had made earlier, so I cut them up, some in half, some quartered, cherry toms, plum toms a whole variety and put them on baking tray. I then crushed some garlic over them, followed by some dried Herbs de Provence (I must add you could use tarragon, oregano, etc, just see what you have in your cupboard). I then drizzled olive oil and balsamic vinegar over the whole lot and popped into the oven at 130c for 45 minutes.
Once cooked I popped them on the side to cool down to room temperature then tossed them through a mixed bowl of leaves. What can I say absolutely delish and would highly recommend.
