I love a Buddha bowl and whilst eating out recently I had such a gorgeous falafel mezze bowl for lunch, I couldn’t help but recreate this lovely dish for myself at home. I hope you enjoy as much as I do.
Falafels (3 per person)
Feta Cheese (15g per person)
Hummus (2 tablespoons per person)
Mixed Beans (1 tin in water)
Pickled Red Cabbage
Mixed Salad Greens
Pitta bread (optional)
Pop the falafels into the oven at 200c for 10 minutes to warm through. Then toss the green leaves in a French dressing (3 teaspoons olive oil, 3 teaspoons white wine vinegar and 1 teaspoon Dijon mustard – pop in a jar and shake until all mixed nicely together).
In a bowl arrange the leaves with the dressing, top with falafels, covered in the hummus, and add the mixed beans and pickled red cabbage. Then sprinkle over the feta.
