I love the sunshine, I love the heat we are getting at the moment, I love summer and there is nothing better to eat in the summer that a lovely curry, but more importantly a lovely healthy delicious curry. This tofu rogan josh has been adapted and adapted again as I have changed the recipe to suit my own taste, if you like your curry stronger add extra spices, a little weaker then take a little spice away. If you want to be extra healthy add 2 pumps of olive oil rather than a couple of teaspoons, it doesn't alter the beautiful taste in my opinion. But most of all enjoy sat in your garden or on your balcony in the sunshine.
Ingredients: (Serves 4)
2 teaspoons olive oil
750g firm tofu - cubed
3 garlic cloves – finely chopped
2.5cm (1”) fresh root ginger – peeled and finely chopped
1 teaspoon turmeric
2 teaspoons ground coriander
2 teaspoons cumin seeds – roughly crushed
2 teaspoons garam masala
½ teaspoon crushed dried red chillies
2 tablespoons plain flour
400g can chopped tomatoes
300ml vegetable stock
Pop the olive oil into a saucepan and heat, then add the onions, gently fry continually stirring for approximately 5 minutes, or until the onion has softened (if the pan gets dry add a little drop of water). Stir in the garlic, ginger, spices and dried chillies cook for 1 minute, then mix in the firm tofu and mix through all the spices and onion to cover. Mix in the flour stir through then add the tomatoes and the stock. Bring back to boil whilst stirring.
Turn down the heat and simmer for 30 minutes, or alternatively pop into a pre-heated oven at 190c for 30 minutes.
Garnish with fresh coriander and serve with rice (or cauliflower rice as I did in this picture) and naan bread of your choice.
