This festive and pretty cranberry and pomegranate-infused syrup, mixed with bubbly (or soda water) and a squeeze of lime is the perfect sparkling drink to celebrate Christmas or toasting in the New Year.
Makes 12 drinks
1/2 cup unsweetened 100% cranberry juice
1/2 cup unsweetened 100% pomegranate juice
3/4 cup sugar
Prosecco/Champagne or Soda water
Whole cranberries and slices of lime for garnish, optional
To make the simple syrup:
In a small pan, stir together fruit juices and sugar (reduce the sugar if you prefer your drinks less sweet).
Heat gently and bring to a boil.
Turn to low and simmer for 5 minutes, stirring until sugar has dissolved.
Pour the syrup into a jar and cool completely before storing in the refrigerator.
Assemble your tipple:
Pour 1.5 tbs (or to taste) of your cranberry-pomegranate syrup into a champagne flute. Top with Prosecco, Champagne or Soda water and squeeze in a wedge of lime.
If you want to show off, add the garnish, using a toothpick skewer a whole cranberry and half a slice of lime before dropping it in.
